Simple Air-Fried Falafel Sandwich in Just 30 Minutes
As we all have found out through the pandemic, taking a real lunch break has been a luxury. Somehow, although we’re working from home, the constant barrage of Teams pings and back-to-back meetings keeps us from taking care of ourselves for a proper, home-cooked meal.
That’s why I love this semi-homemade falafel sandwich recipe that I first made when I was working at my last job, which offered Work From Home Wednesday. Each week, I would use the “extra” time on Wednesday to try a new recipe to make at home, one that would be both healthy and satisfying. And so the air-fried falafel sandwich lunch was born. It was one of the recipes I featured on my weekly series, #WifeyWorkFromHomeWednesday.
Now however, through the pandemic, I’ve come to rely on this recipe more often, as it’s quick to make while you’re in between Zoom meetings, while still being tasty and filling enough to hold you over until dinner (even my non-vegetarian husband agrees). Plus, it’s healthier than delivery since the falafel is cooked in an air-fryer rather than deep fried. This sandwich is far from dry since I slather on hummus and my version of a tzaziki sauce right on to the bread.

Air Fried Falafel Sandwich
Makes 2-3 sandwiches
Ingredients:
- 1 packet Knorr Falafel Mix
- 1/3 cup and 2 tbsp water
- Olive oil spray
- 1/2 cucumber: 1/4 chopped or grated for tzaziki, 1/4 thinly sliced rounds
- 1/2 hungarian pepper – sliced into rings
- 2 tbsp minced garlic
- 2 tbsp chopped dill weed
- 1 cup greek yogurt
- 1/2 tsp black pepper
- 2 tsp lemon juice
- 1 tbsp olive oil
- 1/8 cup sliced red onion
- 1/4 cup feta crumbles (optional: make it reduced fat)
- 2 tbsp hummus (we like Sabra’s Supremely Spicy Hummus)
- 4-6 slices of whole grain bread
Method
- Mix 1 packet of Knorr Falafel Mix with 1/3 cup and 2 tbsp of water. Let it stand 10 minutes
- While the mix is sitting, cover rack of air fryer in foil. Spray lightly with olive oil spray.
- Spoon a tablespoon of the mix into your hands and create 1-2 inch patties. Place onto the foiled rack in air fryer. Spray the patties lightly in olive oil once more.
- Place lid on air fryer, set temp to 420° F (for crispy texture). Allow falafel to cook for 7 minutes on each side.
- While falafel is cooking, make your cooling tzaziki sauce by mixing the yogurt, dill weed, garlic, cucumber, lemon juice and olive oil.
- Once falafel is cooked and your tzaziki sauce ready, assemble your sandwich: Spread 1 tbsp of hummus to one side of each slice of bread. Top one slathered slice with sliced cucumber, red onion, and feta cheese, 2-3 falafel patties and 2 tbsp of tzaziki. Place second slice of bread on top and enjoy!
- Optional: Place sandwich in a panini press or on the griddle for a hot sandwich
